Holiday Tradition

One of our very favorite holiday traditions (aside from creating beautiful smocked holiday clothing!) within the Smock It To Me Family is baking!  When the weather cools down, our oven turns on!  An absolute favorite among my family is the Chocolate Chip Pumpkin Muffin!  These make the absolute perfect gift for neighbors, teachers, administrators, friends and family!  This special recipe was handed down to me by a very dear friend of mine and has been treasured now for years!  I'd love to pass it along to you and allow you the joy of smelling, tasting & gifting these incredible muffins yourselves!

Emily's Chocolate Chip Pumpkin Muffins

4 eggs

2 cups sugar

1 (15 oz) can pureed pumpkin

1 1/2 cups vegetable oil

3 cups flour

2 teaspoons baking soda

2 teaspoons baking powder

1 teaspoon cinnamon

1 teaspoon salt

1 package chocolate chips


In a large mixing bowl, beat eggs, sugar, pumpkin, and oil until smooth.  Add in dry ingredients and mix well.  Fold in chocolate chips.  Fill greased or paper-lined muffin cups 3/4 full.  Bake 16-20 minutes at 400 degrees.
